The meat is from a slow-cooked corned beef brisket point.
Used an old school commercial grade cast-aluminum griddle circa 1986 (3/8 inch thick), and a chefs press circa 2004 (21 ounces in weight and 8 inches in diameter).
Thanks - the chef's press there is an original one, the more modern ones aren't as pretty but are made in America. The round ones are very hard to find and extra pricy. They don't sell them on Amazon, but you can get them by searching bruce hill chef press. Sometimes you can find used ones on ebay which may be a little cheaper. Maybe.
