Prague Powder Instacure #1

Hi all. I purchased a bag of Prague Powder Instacure #1 about 6 months ago. It was originally pink, but has since turned yellow. I have been keeping it in the food pantry, which is always at room temperature but is lit for most of the day. Any ideas as to why it may have turned yellow? Also, I plan to use it to smoke a pork belly for bacon and wanted to know if it was still okay to use.

Any ideas? This ever happen to anyone?

Pink is just a dye to differentiate it from regular (table) salt). It faded is all that happened. It's ok to use (although I would think pink would fade to lighter pink. go figger).
