Pork Tenderloin

Picked up a pork tenderloin from Trader Joe's and rubbed it with

Sweet Smoked Paprika
Cayenne
Onion Powder
Garlic Powder
Salt
Pepper

And after searing it, I mixed some SBR with Apple Cider Vinegar for a sauce

Along with some roast fingerling potatoes and an arugula salad

Looks excellent! I have been cooking more pork tenderloin recently. Hard to beat that cut of meat for the money.
 
I know that talking about anything other than meat may be heresy in a forum of BBQ fanatics (the pork tenderloin looks quite good by the way), but what are the greens dressed with?

I make my own dressing.

Balsamic Vinegar, EVOO, Salt, Pepper, Grated Parm Regg. Cheese and Minced Garlic

About a 1:3 ratio on the Vinegar to EVOO
