I want to try something new like a Pork Butt,

I bought what they told me was a pork butt, it has a portion of leg and hide. ??? do I take the hide off and smoke or leave it on? I'm not worrying about the WSM doing good, it's me that i'm worrying about. signing off from Flower Mound, TX

That sounds like a Picnic Shoulder, not a pork butt. You can still cook it the same as a pork butt. But you should take off the skin and outer layer of fat. Its some knife work butt will help get the rub flavours onto the meat.

The pork butt is the top portion of the shoulder. In human body terms, if the picnic shoulder is the bicep and shoulder, the pork butt would be the shoulder blade.

Thanks Darrell, this will be my first time with smoking pork, I am going to give it a try and see what happens.

The pork shoulder has got to be the easiest meat
to smoke on the WSM. Just take it up to 190,
remove it, and foil it for a 1/2 hour to and 1 hour
or more. Then pull it.
At least to me, it really doesn't matter what rub you use or even whether you baste/mop it at all.
It comes out perfect every time!
