PORK Butt ideas

I have bbq'd many pork butts, (for pulled pork), kalua pig, and carnitas etc. I am looking to something "different" this weekend with a PorkButt (it is huge..like 9 lbs) I bought recently. WSM is fine, oven is fine too. What have you done different with superb results? Thanks!

I really want to make this again using a butt. I used loin and shouldn't have.

There is a Balinese or such recipe in the pork recipe section that I intend to try. Uses coconut milk, lemongrass, and other Asian seasonings.

Chris - since you're at least in LA if not from LA, please take a look at the Cochon de Lait that I linked to above in my reply and see if that makes sense to you as a butt cook. It may have been the Abitas, but I think that was the best sandwich and probably best pork I've had. (Obviously excluding homemade bacon.)

Please let me know how it works with a butt. The flavor was great with loin, but not as succulent as it was in the restaurant.
