And I picked up a *fresh* pork butt. I was glad I did this instead of the enhanced garbage that ya get at Wally World. Pretty important new year's cook. My question is....I was thinking of injecting my butt with apple juice, and maybe a little bit of honey. How do I prevent hot spots of flavor? Should I just let the butt soak in the marinade instead? If I do this I don't want my pork to be too sweet.

Al,
Once you pull the pork the flavors with incorporate throughout the meat. IMO, I would do the AJ by itself or mixed with rub. AJ and honey together could end up being a bit sweet. Just my opinion though, I have never tried the two together, it may be wonderful. But ya never know. Let us know what you decide and how it turns out.

Pork butt can handle a more complex flavor than just Apple juice and Honey. You want some vinegar, worcestershire, salt, and hot sauce along with juice and honey.
Vinegar really helps bring out the pork flavor.

I never inject a butt. I am one who uses a thin sauce after the meat is pulled.

My sauce soaks into the meat, thereby adding the exact flavor I want.
