New Kingsford with BRITU

This weekend I did some baby backs (3 racks) and used the new Kingsfords. I unfortunately forgot and lit the fire using one chimney lit with another chimney unlit on top of the lit. I was lucky to keep the temp down to the 280's, even with all 3 vents shut. Once I opened it up to put some baked beans on the lower shelf. When I reassembled, it shot to over 400--all with the vents closed. I have not experienced this in any cooks in the past. I'll cut the lit coals way down next time. Are there revised lighting instructions for BRITU's using the new K's?

Luckily, the ribs still came out great and were the hit of the pot luck.

And it is true, when reheating the second day, the ribs taste noticeably smokier than right off the cooker. Really good.
