jim, i’ve probably made this a 50 times since you posted the recipe, always with great results. we sold our house in favor of condos in nyc and fl, neither allows smokers or bbqs, so i’ve tried about 20 oven-based recipes, each worse than the last.

i was about to give up but decided to give your recipe a try and it worked beautifully! no smoke of course but the first recipe with correct texture. next i’ll play with some sort of smoking pan, confident I can come close.

Jim, the ribs look wonderful but I got to say the patty pans are the star of the show! They are my favorite! Boiled until soft then covered with brown butter!! Nothing better....in my opinion.
 
Those look great, Jim! I just happen to have one slab of BB's in the freezer and my Performer needs some love. (y)
