Incoming Pepper Stout Beef

It’s been close to a year since…….picked up 3 nice chuck roasts last stop at the beef butchers…..this one is about 3 to 3.25 pounds….nicely marbled.
Just coming off the grill with lots of JD and some hickory….brisket type rub..
Also making a verde type salsa…it will come out the colour of mud because of the roma.
Also picked up a new toy over the holidays.
Oh and also a homemade “horsey“ sauce and picked up some quality emmental cheese.

Thanks for taking a look……these here days after Christmas are my “6 days of bbq”
New treats for tonight.
Feels like bbq but these babies don’t get to touch the fire.
Made more kraut today…going to try our new kraut with these sausages and left over pasta salad……
