I need a suggestion on what to cook today...

Good morning guys...

It is a gorgeous Sunday morning here in NY. Low temps, low humidity and I don't have one chore to do. It is rare, so I want to take advantage of it.

I need a few suggestions on what to cook today? It is just for me and my family (wife, 2 kids), so I don't want to go crazy. I want to keep it fairly simple, but not that simple :p

Any ideas would be helpful.

Fajitas?

Some carne asada meat (beef or chicken or both), sliced bell peppers, onion, some cheese, some guacamole, soft torillas.
 
When in doubt, I almost always go with pork ribs, some creamy slaw and BBQ beans or garlic bread. If you want something faster, a spatchcocked chicken works well with the same sides.
 
I like Bob’s spatchcock thought, I have a bunch of leftovers from last nights “Burrito bar” dinner which will get used tonight, I think.
 
I decided to mix two suggestions. I'm smoking chicken thighs and yellow/green.
/red peppers. I'll chop some of the meat, stir in some sofrito and grill some tortillas. Pair it all with a nice Tempranillo

Oh yeah, I already made jerky!
 
- 30 minutes at 300
- Place in alum tray and cover for 90 minutes at 275
- Remove from tray, drench in sauce, and back in the smoker for 20 minutes at 275

And this is my post-dinner cigar

BTW - this one goes great with rib eye.
