High Heat Brisket -- Suggestions for 3 briskets at once (about 45 pounds)

Hello Everyone,

I've done many briskets, most overnight. Every year I have a brisket party where I do 45 pounds of brisket on my WSM 22.5, starting the cook at about 11 PM.

I've done one high heat brisket and it was incredibly. Delicious, juicy, great bark, etc...

Can I do three briskets at once using high heat? Will there be any problem with uneven cooking, etc...?

Thanks,

Gil

I can't imagine it would be too different than what you're used to, just quicker. I can't picture how you get 3 to fit, but you might want to rotate them every couple hours.

HH method will probably make for a more consistent cook for you. You may want to protect the ends with foil when you first put them on though.
