Help. 5 Hours. 4 racks. One Performer.

I do 3 racks regularly on my performer, but I have 4 racks to do tomorrow. What is the best way?

3 on the rack and one laying on top?

or roll up all 4?

Assuming that your baking the coals, or putting them to the side in some fashion, you could clean up the charcoal grate and put one there.
 
I would use a rib rack. This allows me to easily have 4 racks of ribs on the grate. I have done this many times on my 18WSM and believe it should work on your performer.

I've done 4 racks of Stl spares in a rack in a kettle, coals banked to one side. It was a tight fit bacause the coals took too much space. I think having two banks of coals and keeping the rack in the center would work great. That's my plan for next time. Temps stayed around 275F the whole cook (measured at the vent) but it cooked more like at 225F on my WSM. I like higher heat spare cooks so will probably shoot for 325F next time too. HTH
