Ribs on Saturday is a must, and the weather is finally warmer. Prep with yellow mustard and "Bad Byron's butt rub"

On the smoker tried for 275 off the bat, but didn't use enough lit to get there, so I added more. Did the 3-2-1, but only did 30min at the end. They came out a little on the dry side, but still nice and tender. I think I like 250ish better.

I can see the start of something here: a layer of chicken w/ a layer of pork w/ a hamburger an' than a pork steak topped off w/ bacon wrapped scallops and 'gus... Thanks for the inspiration:)
