Forgot I had thawed a rack of St. Louis cut ribs in the garage refrigerator until 5pm today. Quickly fired up the kettle and threw them on. Gotta be up early tomorrow and we have a newborn, so time and sleep are both hard to come by.

All of that being said, I'm trying to cook them around 325-350. Any thoughts on how this is going to work out and timing?
 
When I do ribs like you are doing I cook them for an hour then foil them for an hour and then back on the grill unfoiled until done which usually takes around another 30- 45 minutes.
 
I do high heat ribs all the time. Depending on thickness your looking at 3-4 hrs. I like a little tug on my ribs.
 
Well cooked them about 4 hours and turned out pretty good. Going to be much better than a sandwich for lunch tomorrow. Would so it again in a pinch, but prefer 250-275 range.
