First smoke went well. Temp hovered around 325 for 2 hours. Nice crisp skin, chicken thighs were moist with a hint of smoke. Used dry, foiled water pan. Seems everything went better than I expected. Think I'm hooked. =)
Glad your first smoke went good. Chicken on the WSM is awesome. Just for kicks try your chicken receipe with NO water pan at all. I love my chicken that way.
