Finally got to use the WSM I have had sitting in my garage the past month or so. It was an x-mas present so I promised the giver i wouldnt use it til x-mas. I had my other smoker to use until then so it wasnt tha big of a deal really.

Did (2) slabs of BB ribs, some ABT's, and some kilbasa.

Windy afternoon, but the WSM held 225 the whole time. No vent fiddling, etc.

thanks for looking, kicking around the idea of firing up the WSM in the snow today.
 
thanks guys, its good to be back on board using lump charcoal and wood vs a propane smoker with a little lump and wood chunks.

The flavor and texture improvement is night and day.
 
thanks, had some of the ribs cold from the fridge for breakfast.

ABT = Atomic buffalo turds

Cored seeded jalapeno wrapped in bacon and smoked. This version had a chunk of kilbasa and some pepperjack cheese inside..

Ive been hooked on smoking foods for a while, finally got the right smoker(GOSM is retired, and I gave away my offset w/ sfb). All I need is my Weber kettle, and the WSM.

I am smoking a couple of thick porterhouses and some whole, salted jalapenos for some tacos right now.
