I never had duck before. One more meal I need to add to my to do list.

That is some great looking duck!! I have only had duck once and it was not under desirable conditions. I don't remember what it even tasted like. Duck has been on my to do list for a while.

That's one fine looking duck breast you done up there, I've never had store bought before only wild shoot we do out here... But id eat that one up you made right now...Good Job.
 
First one I've seen grilled. Looks great.

Were there a lot of flare ups due to the fat?

Yes. It's definitely not a set it and forget it kind of thing...You have to watch over it like a hawk. So really it requires you to move it around quite a bit.

Luckily it's not a thick chunk of meat and it cooks in a short amount of time.
 
I've yet to do one on the grill, just the iron skillet inside as I've figured that rendering the fat would be a sure-fire flame fight, but then, I also want the expensive rendered duck fat for other uses.......................Looks great however......................d
