Cow tongue experiment

Decided to try a recipe I saw on YouTube in which turned out pretty good. I braised the tongue in water
W- celery root, parsnips, carrots, onions, bay leafs, shallots, himalayan salt, and pepper for 2 hours. I pulled the tongue and removed the skin. I then put church's hot honey bbq over it and smoked it on the MB 560 for 2 hours using apple, cherry, and peach. I then wrapped in butcher paper with some sweet baby rays for another 90 min or so.
It was fork tender like a brisket. The smoke was subtle but had a nice bbq flavor. We just did a simple side mix. Next time I may brine and just smoke.

My mom would make cow tongue regularly by boiling first and then roasting it in the oven. Once you got over the fact it was a tongue was damn good and cheap that's what my mom was after it was cheap
 
I haven’t had tongue in many years. Your’s looks fantastic and makes me hungry to have it again.
The first time I had it, I was just a kid living in Montana. My Dad won a half a bison in a drawing from the State culling the herd. (In Montana, bison/buffalo are considered and treated as livestock.) He split the half with a friend, so we got a quarter bison and the tongue that was already prepared by the processor. I remember it looking and tasting just like tender roast beef and we used it for sandwiches. I’ve also had it in Basque restaurants where it came out as an appetizer/side dish, served cold, thinly sliced and pickled with vinaigrette and finely chopped garlic and parsley. I enjoyed every time I’ve had it. Quick side note—my Mom made bison steaks for dinner one night and each steak was bigger than the dinner plate it was served on.
Your pics and post have triggered an old memory. Now I may have to have a tongue taco tomorrow for lunch from our local Mexican food truck.

I get what you're saying, I do like eggs. The egg is in a protective shell which I don't eat. I also love calamari and chicken gizzards, but I just can't do beef tongue or liver. It just hits too close to home I guess.
 
When I was young we had tongue often. We actually ate a lot of offal, priests don’t make a lot of money and I was the last of six kids. I remember my grandmother making braised kidneys (I wish I had watched her make them, they were delicious!), liver and onions, we had great tongue but I remember thinking it was weird but, I didn’t care. Later in life when my folks were living in Grand Rapids he found a butcher that would smoke tongues for him and they were really excellent! Many tongue sandwiches enjoyed at that kitchen table! When did we (collectively) get so hinkey about organ meat? I’ll admit I don’t cook a lot of it but chicken liver…spaghetti a la Caruso, pâté, just sautéed and sliced on a Ritz ? All are just plain wonderful!

I hear you Steve. I was just taking advantage of the timing at your expense. I'm not a fan of beef liver, or chicken gizzards and I have never tried tongue.

Winco has frozen tongue. I don’t think it was expensive either.
 
I was a kid my mom made tongue, she asked me if I liked it? I said yes and she said you might not want to know what it is. I said tell me, she said tongue and I laughed and said cool!
 
I've had it at some Mexican food places. I can't handle the tough exterior if they don't take it off. The way you did it, looks good!
 
When I was young we used to go to Jewish Delis and my dad would always order a tongue sandwich while the rest of us ordered corned beef. It never hit me until we were walking out of the deli and I looked in the display counter and looked at an actual whole tongue with the label that it was what it was. I suppose I would not object to trying it again after all these years.
 
My mom used to feed us tongue sandwiches.
They were ok I guess.
Nothing special but not bad.

I would sometimes order a lengua burrito off the food trucks in the city.
Those were much better than the sammich.

A few years ago I bought burritos for the wife and I.
She was fine with hers until she found out what lengua meant.

I was raised on an Eastern European peasant diet so I am fine with most parts from the shooter to the tooter.
I love me a nice plate of liver and onions and prefer pistachios in my liver worst or patte w/ some onions and tomatoes on dark rye (y).
