Cooking butt on Saturday, eating on Sunday

Hey everyone,

I'm heading to the beach this weekend and I would like to smoke a butt on Saturday during the day and then eat it over the next few days while at the beach.

What is the best way to do this? Let it come down to room temp and then put it in the fridge? Then pull later?

I like to pull it as you would normally if you were serving it.
Than let it rest on a rack on the counter for maybe an hour, than transfer to metal sheet pans and fridge over-nite uncovered.
The next morning you can zip-loc or vac seal to whatever size portions you like.

Pull the meat and put in ziplock bags or in an aluminum pan. Reheat at the beach in an aluminum pan with apple juice and water.
