Kicking around the house Sunday and thawed out 2 whole cluckers. 2 pack from costco. Brined for 3 hours in salt/water/sugar. Rubbed down with generic McCormick Chicken Rub.



Get the fire going hot:



WSM Chugging along nicely next to it's big and little brothers.

After 1.5 hours done. Crispy skin and very tender and moist on the inside.



Ended up eating all the wings while I pulled the Cluckers. Skin was fantastic. Water pan foiled, no water. Just left all vents open and let the WSM roll w/ a little bit of apple wood. thanks for looking.
 
Great looking birds. I do the same sometimes, and cant resist the crispy skin fresh off the fire. Gotta "test" the wings to make sure its safe for everyone else. ;)
