I'm currently smoking a chuck roast with the hopes that I can slice it up and make some roast beef sandwiches. I know most of the time with chuck roast, you either pull or chop it. Is it possible to have a nice sliced chuck roast? Thanks.
 
Happy NY E Mann! Sure u can slice the chuck for roast beef sandwiches. Once the chuck hits internal temp of 165-170 it is cooked but still tough. Wrap in foil for about 30-45 mins just to get it tender enough to slice it up.
 
Thanks Noe! I pulled it off around 160 and have it foiling now. Going to wait for it to cool off a bit before I slice. I did take a small slice just to taste it and it was pretty good. Can't wait to get into the center of the roast to taste the more rare parts!
 
E Mann, how'd this turn out? With the price of brisket being so cheap, I haven't considered smoking a chuck roast.
