Chicken Bratwurst

Finally after 4 months of thinking about making bratwurst, I finally got round to making some last weekend.
With a hand grinder I ground up some chicken thighs.
Added a Hatch Green Chili seasoning from waltonsinc.com
Used my LEM stuffer to stuff them into collagen casing.
Then I grilled a few indirect, so they wouldn't explode.
I definitely will do this again.
