Center Cut Beef Ribs,

Howdy,

Went to walmart today and got 2 racks of ribs and some center cut beef ribs..

I never smoked center cut beef ribs. i was planning on putting them in the lower rack for 5 5.5 hours.

is that to much or not enough time. I know the pork ribs will be done.. also i plan on cooking at about 230 ish degrees lid temp. Any info would be great.

done beef ribs often...
they're a shorter cook than baby backs and spares here.
at 225'F to 250'F, they're usually ready in 4 hours, my estimation.
 
Beef cooks faster for me in Colorado as well. About 2.4 hours at 225 but I like them med-rare.

I usually do a couple racks of beef under my spares on the top rack.
 
Beef ribs are usually well done within 4 hours on the WSM. If you want them rarer then you would obviously take them off after less time.
