Greetings! As part of my run-up to competitions this summer, I am practicing butts tomorrow. And 4 racks of ribs. I thought I would post pics as I go along.
I purchased two bone-in 10 lb. pork butts from a very reliable local butcher. I thought the meat looked great.
Here it is out of the package:
The butts were in pretty good shape to begin with, so I only trimmed off just over a pound of fat:
I rubbed them (with a homemade batch), wrapped them, and put them in the fridge overnight:
Plan: wake up at 5AM, start the chimney, inject with FAB-B, rub again, on to the smoker around 5:30, smoke at 230F for 13.5-15 hours (I would guess)using my own oak and some cherry, with my Stoker monitoring temps. I'll be running StokerLog to follow the progress. I'll trim/rub the ribs in the morning and then put them on about noon.
