Butcher Paper brisket

When wrapping with butcher paper at 165 degrees, can I safely wrap the butcher paper wrapped brisket with foil when putting it in the cooler after taking it off at around 200 degrees? Or should I remove the butcher paper and wrap in foil for the cooler?

J, if I were trying the paper, I wouldn't mess with foil during the rest, either, but that's me. Maybe just wrap another layer of paper on and/or use plastic wrap over that? I haven't tried using the paper yet, but will soon, if I can ever remember to pick some up. Let us know how it turns out and what you think.
