I would also like to add that all that fat all ya all cut off the pork before smoking, well throw it into a dutch oven or skillet and cook it down low heat, it will season the oven or skillet. much nicer than shoving a dutch oven or skillet in the kitchen oven to season.

I used the nastiest cheapest ham I could find to season my MACA 15 as it is way to heavy and large to put in an oven. kept 15-20 briquettes under and 30 or so on top, and added as necessary using match
