Brined Chicken Storage

Can I store brined chicken for half a day to a day in advance of my cook or do I need to get it into my WSM as soon as possible?

If you are cooking at high heat then for best skin texture it is better to air-dry the chicken in the fridge anyway so, yes, you can. Remove the chicken from the brine, rinse if necessary, and place on racks on sheet pans and store in the fridge--uncovered--till cook time.

Even if you are low/slowing and not cookingfor skin texture you can still do the same thing, obviously.

I love this message board..I was thinking the same thing earlier today as I am going to be brining some chicken for tomorrow. I thought I would come and search to find some comments on this and within a minute I get an answer.
