Blue Cheese Soup

3 tablespoons butter
3 tablespoons flour
3 cups chicken stock
2 cups milk
1/4 pound blue cheese -- crumbled
1 cup half and half
1/4 teaspoon salt
1/4 teaspoon white pepper
chives -- chopped
mushrooms -- sliced
<LI>Melt butter, whisk in flour. Whisk until flour is absorbed.
<LI>Stir in 1 cup of the stock. Cook over medium heat until thickened.
<LI>Add remaining stock and milk. Simmer 10 minutes.
<LI>Stir in cheese, half and half and season to taste. Add chives and mushrooms.
