Best Way To Reheat


 
Steve-- What you want to do is to cool the meat first. Put it on a cake cooling rack atop a sheetpan and let it sit on the counter for an hour, then place the whole deal in the fridge or freezer to cool the rest of the way. Next, vac and seal. The meat need neot be frozen first because you need not take the vacuuming process to the point that the meat is squeezed. Leave whole.
 
Dave-- Should work just fine. With brisket especially, do not overheat. Take it to serving temp (140-155, tops) and no higher.
