beef short ribs

I'm smoking boneless beef chuck short ribs Monday. What should the meat temp be when done. I'm not sure if you cook like a steak or like brisket. Thanks, Jeff
 
A probe should slide into the meat effortlessly, same as for other tough cuts. Finish temps can vary, especially for thin items, so temping, imo, shouldn't be bothered with.
