If your cooking @ 225 to 250 and not foiling i have had them take any were from 4hrs 45 min to as long as 7 hours . there is no set time there done when there done. BUT I use the tear bend test and just start cking them after 4 hrs . after a while you get a feel for how its coming along . but they will surprise youi every now and then so you gotta ckem
