Hi All,
I was pondering the idea of spicing up a couple of butts before freezing. Anyone done this or have any opinions. I generaly dont't like to freeze meat but you know the drill...Go to Costo for paper towels and come home with 25# lbs. of pork !!!

I've heard of marinating before freezing meats but not rubbing. My fear woudl be the salt in the rub drawing moisture out of the meat. My inclination would be to thaw then rub.

I don't think there's any real benefit to rubbing and then freezing. But, as Tom noted, salt in a rub might tend to start the meat curing during the eventual thaw, and you'll likely end up with some portion of the meat tasting hammy.

Hi,
I regained my senses and decided against the pre-freeze rubbing.
Why mess around and end up ruining what will soon be some really "Good Q"!
