Hi guys. It's been a while. Hope everyone's well. Anyway I figured this might be of interest to folks.
As a gift I picked up 2 10 lb Certified Angus - Prime flats. For good or for bad this is the fastest brisket cook I've ever had.
Pit at 225 using a Guru in ramp mode - bottom rack with the probes. 8 hours for the thinner of the two (bottom rack) all the way up to 195. 8 hours 30 minutes to 193* for the thicker of the two on the top rack.
I was prepared for a faster cook due to less connective tissue but Wow! Never saw this coming.
Now all I have to do is figure out how to hold these suckers for 8hours. At least they'll be well rested.
