For my second cook, I put 4 chicken legs and a turkey breast on the bottom grate. 3 racks of ribs on the top grate. I brined the turkey overnight in saltwater with peppercorns, and the chicken was brined two hours in kosher salt and brown sugar. I then used Zehnders chicken seasoning on the legs.
For the ribs, I used a rub recipe from Jeff's smoking meat.com. I wrapped them after 2 hours in foil with apple juice, and the last hour I put sweet baby rays sauce on them. Marvelous!
