Last week I broke in my new WSM 22.5 by doing a brisket. My wife had a friend in town and asked that I do some ribs. She has tried mine before but from my previous smoker (orion) so today I did 2 racks of spare ribs for the 1st time on my WSM. I tried to do the Harry Soo method @275 but I had a hard time controlling/maintaining the temps. The smoker ran from 250-275, I foiled the water pan but added no water.

On the WSM for 3hrs
After 3hrs and ready to hit the foil for another 1hr...when I first saw them, I thought I had burned them/messed up the cook
