Shrimp Fajitas

Another EZ dinner for a hot summer evening. Fired a mini chimney of KBB... did a roundup:

Noticed that 1/3 lb Costco shrimp (tail off, precooked/frozen 50-70/ lb - thawed), a serrano, sour cream & the evoo had escaped. No problem... I know where they are.

Cut 3/4 of the red bell into strips, sliced 1/2 the red onion vertically, fine chopped the serrano & minced 3 cloves garlic.

Once the coals were white, put them in the Smokey Joe, let things cool to medium - high, heated a CI skillet with a tablespoon of evoo, got things almost smoking & added the bell pepper, garlic, onion & serrano. Sauteed about 4 minutes.

Stirred in the salsa verde, 1 tsp ground coriander, 1/4 teaspoon salt & the shrimp. Sauteed about 2 minutes more.

Time to eat!!! Served on a warm flour tortilla with chopped cilantro, sour cream & avocado slices.

Robert, fantastic cook and great for a hot night. Like Alber said never thought about Shrimp Fajitas, but I'm doing so now.
