Yep, GRILLED.
we were in Wautoma last Sunday, planning on being home in time to smoke a FAST rack of baby backs...
but we arrived 90 minutes later than I expected.
so, I decided to GRILL my ribs
used a FULL Weber charcoal chimney of new Kingsford
tossed that once lit to one side of the Weber 26"OTG grill.
foil on the naked side.
seasoned the ribs with EVOO, kosher salt & pepper then
sprinkled all over them with Penzey's California Seasoned Pepper
oh yeah, one large hunk of APPLE wood on the hot coals
The dome therm temp was an average of 400ºF... peaking at 425 or so.
after 30 minutes or so, I flipped the pork
lettem sit for a few minutes, then wrapped'em in foil for 20 minutes.
after the wrap, I placed them OVER the heat
...then off to the side for a few more minutes.
after a total of 1 hour and 25 minutes, I felt, These Ribs Are Done.
So I took'em off to rest for bout 15 minutes uncovered.
Then sliced them...
Guess What???
I'm Doing These AGAIN This Weekend !!
They Were GREAT! Moist! Meaty!! Flavourful!!! Some of the BEST Baby Back Ribs I've EVER Cooked!
