Eye Round Roast

Been gone for a week in Puerto Rico for a family wedding and had great weather and a fabulous time. But now it's time for some cooking so here we go.
Found a nice Eye Round on sale today and figured a great dinner and good sammies this week.
Diced up then crushed Sage and Rosemary into a real fine consistency, mixed it with beef broth, a few drops of Worcestershire, some EVOO and injected it into the round and rubbed the balance on the meat.

Browned the roast in the CI and then ran bamboo skewers thru it to keep the fat cap on top

On the Genny till 130 and some Yukons been on the whole time at 350

Excellent looking cook Bill!! I kind of ignored this cut of beef but since beef prices have been high I have been using EOR for beef sandwiches and it is becoming one of my favorite cuts!
