Today's lunch was a Cuban sandwich. I started by trimming a pork roast from a pork butt and used this recipe. I used the Panini press on the kettle.

a little SPOG then the cumin and oregano

I decided to go with butcher's twine vs the silicone bands

Very nice Dwain!!! I have never had/made a Cuban sandwich using pork shoulder, it has always been made with pork loin. Pork shoulder sounds like it would have a lot more flavor, gonna have to try that!

Dwain that is truly outstanding! That one is going in my must do bucket if it will fit, got to get a bigger bucket!

So Cool Dwain! I'm making (trying to at least) the very same today... using butt also:)
Yours looks TERRIFIC! hope mine turns out as good as yours!

Those are some mad skills on that sammie, the lady of the house has been asking me to try something like this, I hope she doesn't see your post or she will be really disappointed when I try this.
