Bacon Wrapped Grilled Asparagus

Hello All,

This is a great side dish for almost any meal.

1 lb Asparagus
1/2 batch Mediterranean Marinade
6 slices bacon
4 cloves garlic minced

Prepare the marinade (make 1/2 half of a batch as described in the link above) a few hours ahead of time. Lay the bacon out on several layers of paper towel and cover with several more. Par cook the bacon in the microwave for 1 minute on high. Allow the bacon to cool. Trim the tough ends off the asparagus (I reserve these in the freezer to be used for stock later). Split the asparagus into six even groups of stalks. Wrap each bundle with a strip of par cooked bacon and use toothpicks to secure the bundles. Place the bundles in a shallow dish, sprinkle with the minced garlic and the marinade. Allow these to marinate for at least 1/2 hour. Grill direct over a medium fire, turning frequently until the bacon is crisp.

Even people who are on the fence about asparagus will probably like this because - BACON! It does add a little elegance to any meal. I posted pictures of the process here. I hope you enjoy...

Regards,

John
