    make your own wood chunks?

I'm cutting down an apple tree this weekend that is starting to grow into my fence. Not a bit of that tree will go to waste. The smaller branches and leaves will be composted and the larger branches and trunk will be cut, dried and used for either the WSM or the woodstove. Sort of the tree...

First Cook on 18.5 WSM: Ribs and Chicken Legs

Be careful of Krogers branded meats. Make sure the packaging does not say "moist and juicy" or something like that. Krogers adds about 10% (in weight) using a saline injection to their "Moist and Tender" packaged meats. If you buy (say) 5 lbs of ribs, then 10% (or 1/2 pound) is saline solution...

    Your favorite Steak cut

No-brainer for me.....Boneless ribeye rubbed with rosemary-infused olive oil and dusted with kosher salt and cracked pepper. Grill it 'til med-rare. Personally, the best I've found come from the Costco butcher and only cost $8.99/lb. I'm sure there are better, but not for the price.

    Mold in WSM

Formula for mold: 1 part dampness + 1 park darkness + 1 part food particles + 1 part lack of airflow = MOLD I live in Seattle and mold grows EVERYWHERE, especially while waiting for a walk light downtown in mid-December....... Seriously, the Weber covers basically suck. That's part of the...

    Is it weird...

Nope, it's not you. I've have told my kids and wife repeatedly that the ribs and pulled pork taste better the next day. That's why I do most of my smoking on Saturdays and BBQ eating on Sundays. Heck, I currently have about 10 lbs of pulled pork in the freezer (vacuum-sealed). After...

    The Lower Food Grate

I've done a combo using bacon for the top rack and a couple 4 lb bone-in pork shoulders on the lower rack. But, I never use water. I use a terra-cotta planter base wrapped in foil. I pre-heat the WSM to about 200 degrees and put bacon on the top rack and the roasts on the bottom . I take the...

    Keurig

K-Cup cost: 12 for $5.99 or about 50 cents/cup (or more) Costco dark roast whole bean: $6.50/lb 1 lb of coffee will yield about 10 pots of coffee (10-12 cup coffee maker) Cost per pot: $0.69 cents Cost per cup: appox. 6 cents So, the K-cup coffee is about 8 times more expensive than...

    Unique problem......

So.... here's a problem I have not seen mentioned on this board. I have a Genesis 310(?) that I keep on my patio year-round. It sits under a 6' x 8' canopy and is also covered by a canvas grill cover when not in use. Even though I live in rainy Seattle, the grill stays dry year-round. I...

    What a deal!

Steve: The ONLY expiration dates regulated as a matter of law are on prescription and over-the-counter medications. All other dates like "best by", "use by", and similar identifiers are selected by either the manufacturer or the retailer. In the case of meats, if your store has an actual meat...

    Kingsford Competition sale at Costco

AP: For me, Kingsford Competition is my charcoal of choice. I've tried the regular Kingsford Blue and find it too "ashy" and irregular when it comes to maintaining a steady heat. Whenever Costco has a sale, I buy a couple 2-packs. They have their sale every couple months and then (at least in...

    Weber Starter Cube Question

I never use the starter cubes. I have a WSM 18.5" and always start my coals with about 15 briquettes in the chimney and two pieces of paper towel sprayed with non-stick spray. This has worked in cold, warm, rainy, dry and snowy weather. Yes, I get a little ash on the bottom of the chimney...

Gray color coming from spare ribs?

I have a standing rule of NEVER liftng the lid of the WSM for at least 3 hours (unless I'm cold-smoking cheese). I consider the chemical reactions or interactions taking place between the meat, the heat, the rub and the smoke as being akin to Medieval magic and intended to remain under cover. :)

    What a deal!

On Friday I was at my local Kroger store (in Seattle they are mostly Fred Meyer or QFC stores) and as usual headed for the"Managers Special" bin in the meat department. I can usually find some pretty decent deals on steaks and burgers. But I hit the jackpot on Friday with a double-whammy sale...

    This is my WSM...

j.Ray: Welcome to the WSM family! I researched for about 3 months before deciding on the WSM 18.5. That was about 18 months ago an I have never regretted the decision for one minute. You won't either! I have also not bought bacon from a store or ordered ribs or pulled pork from a restaurant...

Thoughts after two tries at baby back ribs

I buy the Costco cryo-vac back ribs almost exclusively and cook them on my 18.5" using a modified 3-2-1 method. * Smoke at 230-240 for 2.25 hours (apple wood and Kingsford Competition) * Foil them with a little brown sugar sweetened apple cider vinegar * Back on the smoker for 1.25 hours *...

Best covers for Weber Spirit e310

Genesis: http://www.amazon.com/exec/obidos/ASIN/B000HCNEWM/tvwb-20 I believe the Spirit is a bit smaller than the Genesis. The Medium cover fits up to about 60" wide and is what I have for my Genesis. The Small fits up to 43.5" wide. WSM 18.5"...

Best covers for Weber Spirit e310

I have these for my WSM and Genesis. They are far superior to the Weber covers. http://www.amazon.com/exec/obidos/ASIN/B000HCNEWM/tvwb-20

    Reheating from frozen foodsaver packets

I slow-thaw any frozen, vacuum-sealed meat product (smoked or otherwise) in the fridge. A 1.5 to 2 lb. packet of pulled pork usually thaws in about 24-36 hours. I then re-heat LOW and SLOW in a 175 degree oven using a foil-covered glass baking dish. I've never used the simmering water method...

Saving unused coals after minion method

Waste not, want not. I have never let a single piece of charcoal go to waste. After each smoke, I simply close all vents and let the WSM sit and cool overnight. The next day I remove the charcoal ring and shake the bottom rack until all of the ash and smaller pieces have fallen through to the...

    Storage Suggestions

Ditto on the patio box suggestion. Mine holds all my smoke wood, charcoal, grill tools, supplies, starter chimney, etc... See my post last week about storing cheap clear plastic lighters in these boxes. In direct sun, it can get toasty inside the box. My 3-pack of lighters (unopened) actually...
