    Caveman Dinner Party

No pics due to the fact I spent the night grilling in the dark and pouring rain, but the goddess and I had another couple over on Saturday for a bit of a dinner party and I was able to experiment with a concept I've been working on - Four courses for 4 four adults using just the kettle and my...

Sunday, Spetember 18 - National Cheeseburger Day!!!

OK, who's making killer cheeseburgers on Sunday? Anybody care to share some ideas? I'm thinking sort of a Mediterranean flair - a salt/pepper/garlic spiced patty with Havarti, peppered bacon, grilled bermuda onion, tomato and white garlic grilling sauce.

    Hot & Fast???

Is anybody here trying the new "hot & fast" BBQ trend? On another forum I'm hearing stories of ribs < 2 hrs, butts < 6 hrs, and even rumors of competition cooking at higher temps in less time. By all reports the results are comparable. I haven't tried it myself and I'm almost afraid to find...

Tragically Hip Day - August 20

As some of you may know, hometown boys The Tragically Hip are playing their final concert here on Saturday night. My social anxiety won't let me consider venturing out into the melee that will be Kingston, but the goddess and I are going to have cocktails, stream the concert and grill all-day...

    Cubano sandwiches

Cheap-*** picnic from the discount bin. 12 hours in mojo marinade then slow cooked for 8 hours indirect. Basic Minion method - no gadgets or accesories. No smoke other than the hardwood charcoal. Let it rest wrapped up in foil and a towel and left the vents open just enough to keep the fire...

Friday night supper turned into a fuel management exercise...

Got home about 6:30 after making what seemed like a dozen stops on the way last night, went to fire the grill and realized I had forgotten to stop for charcoal. There was about 10 or 12 briquettes left in my storage bin. What I should have done: Turned around, gone back out to the store and...

    What is your cooker's name?

Many years ago the Pitmaster at Dinosaur BBQ in Syracuse resolutely informed me that all pits have their own personality and it is terrible luck to not recognize this by naming them. Following this sage advice, over the years I have had a Sputnik, R2D2, Bertha, and Humpty among others. It took...

    Gadget-free Side Ribs...

...and a bonus piece of country style thrown in the package. Stock OTS and no accessories or gadgets. No water pan or drip pan. One chimney full of unlit briquettes in a basic pile one one side with 10 lit ones sprinkled over the top. a tinfoil smoke pack on top of that and never touched the...

Super easy Wednesday night grilled pizza

Basic sauce with San Marzano tomatoes and garlic in the blender, sliced Mozza, basil and Pancetta on a pre made shell. 2/3 of a chimney grilled indirect, then spiun the grate to finish the bottom over direct heat. Not a masterpiece, but not bad for a regular old worknight supper.

No, not a chili cookoff, a CHILLY cookoff! Our little Canadian team headed from Canada to Concord, Mass. for the 10th annual NEBS Snowshoe Grilling Challenge on Saturday. New England sure does love it's BBQ. Barely a few degrees above freezing and 18 teams came out to grill fish steaks...

    Air leaks

I have made a few changes to my el-cheapo sunbeam smoker to make it perform better and coupled with the Minion method I learned here it had produced some very good Q. I believe that the one thing that really makes the difference beween my smoker and a real WSM is that air leaks in all over...

    Culinary Institute of Smoke Cooking

Has anyone heard of this home-study school? It's a course that was developed by Charlie and Ruthie Knote, who both seem to be well-known in BBQ cirles from my limited research. If anyone has any firsthand knowledge or feedback on this course I would greatly appreciate it. I'm thinking on...

Minion method on a horizontal grill?

Hello folks! I have a Char-griller horizontal barrel-style grill and several times have tried smoking diffent items with it using the indirect method. I like it better than using a kettle grill as the surface is huge and it is easy to get the meat right away from the direct heat. The problem...

    Are WSM wannabes allowed here?

Hi folks! Found this site by accident a couple of days ago and was absolutely astounded by the amount and quality of the information contained within. A real pleasure to experience. I do not own a WSM. I have always wanted one, and one day probably will have one, but in Canada they are VERY...
