Good morning folks!

My smoke on the holiday weekend went off without a hitch thanks to the wonderful information on this site and from the members of this board.

The Minion method rocks! By modifying my Sunbeam smoker and using this method, my 2 five pound butts were at pulling temperature in 10 hours, and my little cooker held temp. the whole time without changing out the coals or having to add any! I couldn't believe how stress-free it was.

Everyone loved the Southern Succor rub, although I used cracked black pepper instead of ground, and it really made the bark quite spicy. We served it piled high on fresh kaisers with baked beans and slaw.

Thanks to all of you I am now excited about making BBQ again. I think I'm going to treat my wife to some BRITU ribs this weekend!
