Thew WSM looks to be built a lot better. How do other companies get away with creating a similar unit, (2 grates, water pan)? Is this set up not copy righted by Weber?

Maverick will be selling a competition smoker that has similar features to the WSM. It appears to have two grates and a water pan. MSRP $360 Info

Anyone know if briquettes fall through the gaps shown on fred's pictures? I have an 06 WSM which I've yet to use, so I'm unsure.

Try using a heat sink like a clay saucer. Probably want to start closing the bottom vents at 175. Also what has worked for me is starting with the 3 bottom vents at 50% open only. Then once i get to about 175 I reduce them all to 25% open. Then when it gets to 200 I close one completely and...

Looks great. I had a Brinkmann like yours, it's a HUGE difference in fuel consumption and tending compared to the WSM.

My ET732 came in today. Unfortunately it appears that my box is missing the bbq probe clip. Update: They're sending me a new clip, good CS.

Maybe ash build up snuffing out a few coals?
