    Did I screw up? low and slow brisket question

    Still can't get the heat up.

    Question on when to pull butts off the cooker

    Put 2 boston butts 14 lbs on last night @ 9:00. Internal temp is 189 right now. From what I've read here I should pull them at 195 - 200. Do I let it cook a while at 195 or remove it as soon as it reaches that temp? I'll try to put pics up later today.

    I can't keep the heat up

    Two chimney full, minion method. Water in the pan. Stayed at 225 for the 1st 2 hrs now it's all I can do to keep at 200. All three bottom vents open full. I've tried every combination and nothing is making the temp go up. There's still plenty of charcoal. HELP!

    Today's the day 18.5 or 22.5?

    I'm torn I think the 18.5 will be more than enough but a voice in the back of my mind keeps telling me I'll be sorry if I don't get the 22.5. For the most part it's gonna be just for the wife and myself. I do want to smoke a turkey for thanksgiving and we usually have a big bird 15 - 18 lbs...
