Weber SS Performer with Gas Assist Questions...

I just rescued a SS Performer with gas assist from the weeds in back of my neighbor's house last night. I haven't had a chance to check it out too closely yet, but it looks to be in pretty decent shape but in need of some cleaning up. I forget the date code, but I think it is around a 2010 or...

    Meater Reviews?!?!?!

I know there were several on here that were in on the kickstarter campaign for the Meater wireless digital thermometers but I haven't been able to find a whole in the way of reviews. So for anyone that has one, how is it working out? What is the range like when using your WSM or kettle? My...

    Reheating pulled pork

I like this idea for something stable at room temperature like oats, but I'm not sure I'd like the idea of leaving cooked pulled pork sitting out at room temperature for 6-8 hours before starting to heat it.

    Newbie Question about cook time

I wish I was able to get smaller packers to experiment with here in central PA. Everyone I've talked to can only get 20+ pounders and they charge the same price as they do for a trimmed flat. And I just can't see spending that much $$$ when there is so much fat that is going to be wasted.

    First overnight smoke coming up...

Don't worry, always run with an empty foiled pan, never water. I may even try this run with no pan at all. And I am a bit concerned with the time as well, but I figure I can always bump it up when I foil in the morning.

    First overnight smoke coming up...

I've only used my WSM a few times and while my inclination has been that it will hold temp well enough I am still a bit worried about leaving it smoking while I go to sleep. I was thinking that the TTT might help give me a bit more peace of mind, in addition to wanting to play with the new...

    First overnight smoke coming up...

I know that the TTT is designed to operate with all vents closed on a kettle, but everything that I've read online suggests that people need to have the vent cracked open. The instructions actually even say that you may need to open the bottom vent a little bit. I assume with a WSM I'll need...

    First overnight smoke coming up...

I offered to smoke some meat for an upcoming family get together and I just found out that I will be smoking 2 pork shoulders. That's great. I also just found that they want the food to be ready at NOON! And we're going to be going to the races the night before so I likely won't be getting home...

    Wings on WSM?

Thanks for the replies all. I thought about cracking the door but I was afraid it would let the heat out as much as it would help with airflow. I'll give that a try next time.

    Wings on WSM?

Hi all, I have only used my WSM a few times so I'm still learning how to control it a bit. I cooked wings on it for the second time last night, and for the second time I was underwhelmed with the results. I usually do them on my 22.5" OTS at around 400-425 degrees, but last night I had too...

304 Stainless Steel Top Cooking Grate for 18.5" Weber Smokers

I also purchased one of these grates and I absolutely love it. Mine fits perfectly, and cannot fall off the supports no matter which way I slide it (unless I tip it up on end). I have been holding off on replacing my lower grates because the seller on Amazon indicated they would have lower...

Not able to stop fire after cook...

Kingsford blue bag. I checked it last night after work, and I actually have a fair amount of charcoal left on the grate. I'm wondering if I maybe just didn't quite put the lid on right or something the first time which lead to it leaking and continuing to burn up all the fuel.

Not able to stop fire after cook...

Hey guys, I'm just wondering where I should start my troubleshooting on my 18.5" WSM. I've done 2 cooks on it since I bought it used - the previous owner had it for several years and it appeared to generally be pretty well seasoned. The 2 cooks that I have done were pepper stout beef, and a...

    How small is too small

I'm smoking a 3 lb chuck roast tomorrow. I don't see any reason that a small pork shoulder would respond any differently than a larger one. Just keep in mind that your cooking time is going to be more dependent on the thickness of the meat than the weight.

    Replacement grates?

I ended up getting this one... it was waiting for me when I got home from work last night. I'll be using it for the first time this weekend. When I told my wife I had spent more $$$ on a heavier duty SS grate, I expected to hear her complain since I haven't even used the smoker yet. Instead...

    Replacement grates?

Where does everyone buy replacement grates for their 18" WSM's? I'm looking on Amazon and other various resources online, and it is proving difficult to find consistent reliable information - the product number listed on one page doesn't match what is listed for another, for example. The...

First cook on my WSM 18.5

Those ribs look great, man! What are the things that you would change now that you've got a cook under your belt? I just picked up a WSM so looking to learn asuch as possible from the mistakes of others.

    What size is this WSM?

Since this model does not have a port for probe wires, which is the preferred alternative - route them between the lid and middle section, or between the middle section and bottom?

    What size is this WSM?

It was an AU date stamped (i.e. 2012 production) 18.5" WSM... I'd say not a bad haul for $125: A little bit of rust on the grates, and it is a bit dirty but it should clean up nicely... Top rack: Bottom rack: Water bowl: Charcoal rack and ring: Charcoal grate:

    What size is this WSM?

I am set to look at it (i.e. Pick it up as long as there aren't any surprises) at 7:30 tomorrow morning. The guy says he's used it less than a dozen times.
