12 hrs @250º on 4lbs of fuel "No Touch!!"

Craig, I really wish to thank you for this post. This method is an old idea with a new spin(charcoal trail or charcoal maze verses "circle coal trail"). I have been using fire bricks with long cooks. Using MM, but always had to refuel when cooking Boston Butt. I did add a few modifications to...

Charcoal grate fell off of tabs during last butt cook

Thank you for all your comments regarding my recent dilemma. Pat your suggestion for the silicon grommet is definitely the way I will go. I just hate drilling a hole in my new toy, but a necessary evil. Do you recall what size grommet you used (hole size) ¼”? I don’t like running a wire through...

Charcoal grate fell off of tabs during last butt cook

Charcoal grate fell off of tabs during last butt cook. I was using my performer with fire brick rather than the metal basket. I had loaded a good amount of Kingsford and some apple wood chunks and then about 20 lighted coals on one side using the Menion Method. Of course the food grate hinged...

    Smoking hardwood wood scrapes

Thanks everyone for you very helpful comments. Timothy your chart was especially helpful. I always tend to go with the best healthy choice when cooking anything. I don't believe I will use any of my wood scrapes from the hardwood scrape barrel.

    Smoking hardwood wood scrapes

Does anyone have any experiences with using other hardwoods for smoking meat? I know you should definitely not use any pine or conifers. I have a small wood working shop which I am usually building custom furniture. I use a lot of american black walnut and due to the cost usually try to use even...

Tank Gauge not really very accurate

OK, I am going to show my inexperience with gas, but if I am using all three burners for a steak cookout, with say a 10 minute warm up & clean the grill and 5 minutes on each side and say another 2 to 3 minutes allowance to flip steaks for a total of 23 to 30 minutes. I just weighed the old...

John, I live in Florida and really the BBQ season here is year around, but even more so in the Spring & Fall. My son in law just bought (who lives in Kentucky) just bought a very nice Genesis E 320 for $500.00 from Wally World. It had just been returned and the weather is getting a little colder...

Tank Gauge not really very accurate

Joe, Jim & George Thank you for your suggestions. I actually do have extra tanks available, the problem was more about not wanting to change out in the middle of a cook & determining if you had enough gas left for say 30 minutes of cooking. Does anyone have a better way of checking the amount of...

I have been BBQ with charcoal grills my whole life (64 years). My wife recently bought me a new gasser Gensis E320 and I really do like it for those quick & real easy cleanups cooks such as burgers, dogs, steaks, chicken, fish, etc. Here is my problem? I have one of those tank gauges that is...

    New Performer Grill

Don, I bought my Performer a couple months ago for $50.00 after it had been returned to Wally World with missing parts & dented lid & bottom kettle & cracked table. I called Weber and told them the whole story and they replaced everything. I absolutely love this grill & my problem is only that I...
