    If you don't have a chimney starter, use charcoal liter, just make sure it all burns off before putting the meat on.

    From what I hear, the cold is not much of a problem, biggest concern is the wind, it'll take all your heat, I use plywood shield whenever wind is up, works fine

    Charcoal Amount

    For most cooks on the WSM, I'll fill the basket about 1/2 to 3/4 with KBB and pour on 1/2 lit chimney, this will give you plenty of heat for most cooks, haven't done a brisket on the WSM (mainly due to cost). Vents, 1/2 to start with top full open, easily gets above 300deg. hope this helps.Just...

    Weber One Touch vs performer

    I have the 22OTG which is a great grill, only reason I don't lust after a Performer is my limited space where I keep the cookers, I'd go for the Performer if you got room, had to buy a table for use with the kettle.

    Has anyone added legs to a smokey joe to raise it up to be able to use it without stooping? I have a small wood table in a cooking shed that I use but I found I can use the SJ as a wok stove, works great, plan to put legs on it to use it on the porch, just wondered if anybody had done this mod...

    Anybody heard about this grill, kebob accessory? Just read about it on the WKC site, made by Weber but not sold in the U. S., that ain't right, just sent off a question to Weber. It's like the rotis rig, but shorter and has slots for 5 skewers, looks great!

    Spiral sliced ham?

    Just did a spiral cut ham, 1 small chunk of apple wood, cooked at about 300 til IT was 140, came out great, good luck!
