    From what I googled, it looks like the best way to do real jerky is with marinated flank steak using a dehydrator. I guess I can throw 40 bucks on one of those. Thanks for your advice,

    Can I make beef jerky on the WSM? If so, can anyone send me some advice? What kind of meat, how thin, smoke wood, temps, water or foil, marinades, or anything I did not mention? I am on short “staycation” and looking for something new to do.

    Thank you Paul for your help. Alder plank has been soaking for 2 hours, just pulled the salmon from brine, letting it get some air. Going on the grill in an hour or so.

    Door Upside-down for HH Brisket?

    I have an older WSM 18". I always keep the door upside down, if I need more heat, I prop i open with cheap tongs that have teeth on them. It gives you some adjustment.

    These days, I have to go to the next county to buy wood chunks, and they have gone way up in price and are too small. Yeh, home depot hickory chunks are OK, but I am looking for others like “apple, cherry, mesquite, etc..” Does anyone suggest a decent mail order site? I am in St.Petersburg Florida
