    Oh ok that's not bad, that's about the color I got. But I usually get a decent bit darker (mind you, on completely unseasoned wings) when I use the same process but with the lower grate.

    WD-40 is intended for exactly what its letters indicate -- Water Displacement (Formula #40). People try to use it as a lube for some reason, I'm not sure why. And it's def not a penetrating oil.

    Out of curiosity, does anyone know if the deflector is made of aluminum? I'd like to store it on the wire grate tray underneath the cooker, but only if it's aluminum and won't rust.

    Not sure but the Summit does feature the swappable center for a cast iron insert. You could use the char baskets to help keep coals just under the cast iron then use the outer ring for indirect.

    It's 1:12 pm and the butts have been on since 8am, and are at 156 IT. Been holding in the 290-310 range since 8am with no signs of letting up. So far so good.
